Keto Stuffed Bell Peppers
Ingredients
- 4 large bell peppers tops cut off and seeds removed
- 1 lb ground turkey or beef
- 1 cup cauliflower rice
- 1 cup tomato sauce
- 1/2 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground turkey or beef until browned.
- Add cauliflower rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until heated through.
- Stuff each bell pepper with the meat mixture and place in a baking dish.
- Top with shredded mozzarella cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is melted.
