Keto Stuffed Bell Peppers

Servings 4

Ingredients
  

  • 4 large bell peppers tops cut off and seeds removed
  • 1 lb ground turkey or beef
  • 1 cup cauliflower rice
  • 1 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground turkey or beef until browned.
  • Add cauliflower rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until heated through.
  • Stuff each bell pepper with the meat mixture and place in a baking dish.
  • Top with shredded mozzarella cheese.
  • Bake for 25-30 minutes until peppers are tender and cheese is melted.
