Ingredients
  

  • 1 medium-sized head of cauliflower cut into small florets
  • 3 hard-boiled eggs chopped
  • 2 stalks of celery diced
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh dill
  • cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions
 

  • Bring a pot of water to a boil and add the cauliflower florets. Cook for about 5-7 minutes until the cauliflower is tender but still slightly firm. Drain and set aside to cool.
  • In a large mixing bowl, combine the chopped eggs, diced celery, diced red onion, and fresh dill.
  • In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar until well combined. Season with salt and pepper to taste.
  • Add the cooked cauliflower florets to the mixing bowl with the egg and vegetable mixture.
  • Pour the creamy dressing over the cauliflower mixture and gently toss until everything is well coated.
