These keto lemon bars are zesty and refreshing, with a perfectly tart lemon flavor that pairs wonderfully with a buttery almond flour crust. Your family will love this easy, low carb treat!
Keto Lemon Bars
Ingredients
- Ingredients: For the Crust:
- 1 1/2 cups almond flour
- 1/4 cup erythritol or keto-friendly sweetener
- 1/4 cup melted butter
- For the Lemon Filling:
- 3 large eggs
- 1/2 cup erythritol or keto-friendly sweetener
- 1/2 cup lemon juice freshly squeezed
- 2 tablespoons lemon zest
- 1/4 cup almond flour
Instructions
- Preheat oven to 350°F (175°C) and line the baking dish with parchment paper.
- Mix the crust ingredients in a bowl and press into the baking dish.
- Bake the crust for 10 minutes until slightly golden.
- While the crust is baking, whisk together the lemon filling ingredients until smooth.
- Pour the lemon filling over the baked crust.
- Bake for an additional 15 minutes, until the filling is set.
- Allow to cool completely before slicing into bars.
