Ingredients
  

  • 1 lb 450g boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon grated ginger
  • 2 tablespoons olive oil or other keto-friendly oil
  • 4 cups mixed vegetables such as bell peppers, broccoli, snap peas, and mushrooms, sliced
  • Salt and pepper to taste
  • Optional toppings: chopped green onions sesame seeds

Instructions
 

  • In a mixing bowl, marinate the sliced chicken breasts with coconut aminos (or soy sauce/tamari), minced garlic, and grated ginger. Let the chicken marinate for at least 10 minutes.
  • Heat a wok over high heat until smoking hot. Add 1 tablespoon of olive oil to the wok, swirling to coat the surface evenly.
  • Add the marinated chicken to the hot wok in a single layer. Stir-fry the chicken until browned and cooked through, about 5-6 minutes. Remove the cooked chicken from the wok and set aside.
  • In the same wok, add the remaining tablespoon of olive oil. Add the sliced vegetables to the wok and stir-fry them until they are tender-crisp, about 4-5 minutes.
