Ingredients
- 1 lb 450g boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons coconut aminos
- 1 tablespoon sesame oil
- 2 cloves garlic minced
- 1 tablespoon grated ginger
- 2 tablespoons olive oil or other keto-friendly oil
- 4 cups mixed vegetables such as bell peppers, broccoli, snap peas, and mushrooms, sliced
- Salt and pepper to taste
- Optional toppings: chopped green onions sesame seeds
Instructions
- In a mixing bowl, marinate the sliced chicken breasts with coconut aminos (or soy sauce/tamari), minced garlic, and grated ginger. Let the chicken marinate for at least 10 minutes.
- Heat a wok over high heat until smoking hot. Add 1 tablespoon of olive oil to the wok, swirling to coat the surface evenly.
- Add the marinated chicken to the hot wok in a single layer. Stir-fry the chicken until browned and cooked through, about 5-6 minutes. Remove the cooked chicken from the wok and set aside.
