Ingredients
  

  • 1 medium head of cauliflower cut into florets
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup almond flour optional, for a crunchy topping

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Steam the cauliflower florets until tender, then drain well.
  • In a saucepan, heat the heavy cream over medium heat until it starts to simmer.
  • Stir in the shredded cheddar cheese, grated Parmesan cheese, Dijon mustard, garlic powder, salt, and pepper until the cheese is melted and the sauce is smooth.
  • In a greased casserole dish, place the steamed cauliflower and pour the cheese sauce over it.
  • Optional: Sprinkle almond flour on top for a crunchy topping.
  • Bake for 20-25 minutes or until the casserole is bubbly and the top is golden brown.
