Keto Broccoli Salad
Ingredients
- 4 cups fresh broccoli florets
- 1/4 cup diced red onion
- 1/4 cup chopped crispy bacon cooked
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped almonds or walnuts optional for added crunch
- 1/3 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon powdered erythritol or your preferred keto-friendly sweetener
- Salt and pepper to taste
Instructions
- Wash the broccoli florets thoroughly and chop them into bite-sized pieces. You can blanch the broccoli briefly in boiling water for about 1-2 minutes if you prefer it slightly softer, but raw works well too.
- In a large mixing bowl, combine the chopped broccoli, diced red onion, crispy bacon, shredded cheddar cheese, and chopped nuts (if using). Toss everything together to evenly distribute the ingredients.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, powdered erythritol (or sweetener of choice), salt, and pepper to make the dressing.
- Pour the dressing over the broccoli mixture and stir until all the ingredients are coated with the dressing.
- Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
- Once chilled, give the salad a final toss and adjust seasoning if needed.
