Ingredients
  

  • 1 pound ground beef
  • 4 cups cauliflower rice
  • 1 cup diced tomatoes
  • 1 cup diced onions
  • 1 cup diced pickles
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 2 tablespoons sugar-free ketchup
  • 4 slices cooked bacon crumbled
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef until browned. Drain excess fat if necessary.
  • Stir in cauliflower rice, diced tomatoes, diced onions, and diced pickles. Cook for a few minutes until the vegetables are tender.
  • In a mixing bowl, whisk together mayonnaise, mustard, and sugar-free ketchup until well combined.
  • Pour the sauce over the beef and cauliflower mixture and mix everything together.
  • Transfer the mixture into a greased casserole dish.
  • Top with shredded cheddar cheese and crumbled bacon.
  • Bake for 20-25 minutes or until the cheese is melted and bubbly.
