Keto Cheeseburger Casserole
Ingredients
- 1 pound ground beef
- 4 cups cauliflower rice
- 1 cup diced tomatoes
- 1 cup diced onions
- 1 cup diced pickles
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- 2 tablespoons sugar-free ketchup
- 4 slices cooked bacon crumbled
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef until browned. Drain excess fat if necessary.
- Stir in cauliflower rice, diced tomatoes, diced onions, and diced pickles. Cook for a few minutes until the vegetables are tender.
- In a mixing bowl, whisk together mayonnaise, mustard, and sugar-free ketchup until well combined.
- Pour the sauce over the beef and cauliflower mixture and mix everything together.
- Transfer the mixture into a greased casserole dish.
- Top with shredded cheddar cheese and crumbled bacon.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
